- 2 (1.9-ounce) (15-count) mini fillo shells
- 1 (3.5-ounce) package chopped real bacon pieces
- 3/4 cup prepared pimento cheese (Palmetto Cheese brand recommended)
- 1/2 cup mild green pepper jelly (melted)
Instructions
- Preheat Oven: Preheat your oven to 350°F to prepare for baking the appetizers.
- Assemble Fillos: Fill each mini fillo shell with 1 teaspoon of prepared pimento cheese. Drizzle approximately 1/2 teaspoon of melted green pepper jelly on top of the cheese in each shell. Sprinkle about 1 teaspoon of chopped bacon pieces over the jelly in each shell.
- Bake: Arrange the filled fillo shells on a baking sheet. Bake them in the preheated oven for 8 minutes to warm through and slightly crisp the shells.
- Serve Warm: Remove from the oven and serve the bacon pimento cheese bites warm. They make approximately 30 appetizer bites.
Notes
- You can substitute the green pepper jelly with a different mild jelly or jam for a unique twist.
- For a spicier kick, use a hot pepper jelly instead of mild.
- Make sure to melt the pepper jelly so it drizzles easily over the cheese and bacon.
