Description

A delightful Crescent Breakfast Ring combining fluffy scrambled eggs, crispy bacon, vibrant bell peppers, and melted cheddar cheese wrapped in buttery crescent rolls. Perfect for a warm, savory breakfast or brunch dish that's easy to assemble and bake.

Ingredients

Scale

Egg Mixture

  • 5 large eggs
  • ½ medium red bell pepper, chopped
  • ½ medium green bell pepper, chopped
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)

Breakfast Ring

  • 8 slices bacon, fried
  • 8 ounce crescent rolls (refrigerated, 1 can)
  • 1 cup cheddar cheese, shredded
  • 1 large egg (for egg wash, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375℉ to prepare for baking the breakfast ring.
  2. Cook Bacon: Fry the bacon slices until crispy, then drain the excess fat.
  3. Scramble Eggs: In a bowl, beat 5 large eggs with chopped red and green bell peppers, salt, and pepper. Using the skillet previously used for bacon (after draining the fat), scramble the egg mixture until just set and still soft to avoid overcooking.
  4. Arrange Crescent Rolls: Lay out the crescent rolls on a parchment-lined baking sheet in a star shape, leaving the points outward to form the ring.
  5. Add Fillings: Place one slice of fried bacon on each crescent roll section. Sprinkle half of the shredded cheddar cheese evenly around the ring and add the scrambled eggs on top. Finally, sprinkle the remaining cheese over the eggs.
  6. Fold Crescents: Carefully fold the crescent roll points over the filling toward the center to form the ring shape. Optionally, brush the folded crescents with beaten egg wash to achieve a golden, shiny finish during baking.
  7. Bake: Transfer the parchment paper with the assembled ring onto a baking sheet and bake for 20 minutes or until the crescent dough is cooked through and golden brown.
  8. Serve: Garnish with parsley if desired, and serve the breakfast ring warm for the best flavor and texture.

Notes

  • Keep the crescent dough cold before assembling to make it easier to unroll and shape.
  • Fully cook bacon and vegetables before assembly to avoid soggy dough.
  • Scramble eggs just until set and still soft since they will finish cooking in the oven.
  • You can customize fillings with different cheeses or cooked veggies and meats but avoid overloading to ensure even baking.
  • Make ahead by assembling the ring the night before, covering it tightly, and refrigerating. Bake fresh in the morning.
  • Best served warm when the crescent dough is flaky and the cheese is melted perfectly.
