Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • 1 pound lean ground turkey
  • 2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 4 ounce can diced green chiles
  • 15 ounce can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 ounce jar salsa
  • 1 cup shredded colby jack cheese
  • 10 tortilla chips

Instructions

  1. Preheat the Oven: Preheat your oven to the broil setting to prepare for melting the cheese and crisping the tortilla chips at the end.
  2. Cook the Turkey: Heat a 12-inch skillet over medium-high heat. Add 1 tablespoon of olive oil and swirl to coat the pan. Add the lean ground turkey and crumble it as it cooks.
  3. Add Vegetables and Spices: Push the cooked turkey to one side of the skillet. Add diced yellow onion and red bell pepper to the other side. Sprinkle with kosher salt, freshly ground black pepper, chili powder, ground cumin, garlic powder, and smoked paprika. Sauté the veggies and continue to cook and crumble the turkey until fully cooked through.
  4. Combine Remaining Ingredients: Pour in drained black beans, frozen corn, diced green chiles, chopped cilantro, and the jar of salsa. Stir everything thoroughly and cook until heated through and evenly combined.
  5. Add Toppings and Broil: Top the skillet mixture evenly with tortilla chips and sprinkle the shredded colby jack cheese on top. Place the skillet under the oven broiler.
  6. Broil to Finish: Broil until the cheese is melted, bubbly, and lightly browned, and the tortilla chips begin to crisp up.
  7. Serve: Garnish with additional chopped cilantro if desired, then serve the taco skillet hot.

Notes

  • Use lean ground turkey for a healthier option; ground beef can be substituted if preferred.
  • For extra heat, add diced jalapeños or a pinch of cayenne pepper along with the spices.
  • Tortilla chips add a nice crunch; feel free to use crushed or whole chips depending on preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • To make it gluten-free, ensure the tortilla chips and salsa used are gluten-free certified.
