Ingredients
Scale
Salmon
- 4 salmon fillets (5-8 oz. each)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
Sauce
- 3-4 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the salmon: Season both sides of the salmon fillets with salt and pepper thoroughly to enhance the flavor.
- Pan-fry the salmon: Heat olive oil over medium-high heat in a skillet. Add the salmon fillets and cook until golden brown, about 4 minutes per side depending on thickness. Drain some excess oil, leaving enough to sauté garlic.
- Add butter and baste salmon: Melt butter in the pan and tilt it towards you. Spoon the melted butter generously over the seared salmon fillets to keep them moist and flavorful.
- Remove salmon and sauté garlic: Take the salmon fillets out of the pan. Add minced garlic to the skillet and sauté until fragrant for about 30 seconds without burning.
- Simmer with wine: (Optional) Pour in the white wine and simmer for 2 minutes until the wine reduces and evaporates, concentrating the flavor.
- Add broth and cream: Reduce heat to medium-low; pour in chicken broth and heavy cream, stirring gently to combine.
- Add Parmesan and season: Stir in grated Parmesan cheese until melted into the sauce. Season with chopped parsley, salt, and pepper to taste.
- Thicken the sauce: Let the sauce simmer for 2-3 minutes until it thickens slightly, stirring occasionally.
- Reheat salmon in sauce: Return salmon fillets to the pan, spoon sauce over them, and simmer for a few more minutes until the salmon is warmed through.
- Serve: Spoon the creamy garlic butter sauce over the salmon, garnish with additional parsley, and serve hot for a delicious meal.
Notes
- Herbs – You can substitute fresh parsley with thyme or dill for different herbal notes.
- Add more flavor – Sauté diced shallots or onions with the garlic, or season salmon with garlic and onion powder before searing for enhanced taste.
- Zest it up – Add capers to the sauce or lemon slices while simmering, or drizzle lemon juice over the salmon just before serving for a fresh zing.
- Add some heat – Include red pepper flakes in the sauce or on the salmon to add a spicy kick.
- Spinach – Incorporate baby spinach into the cream sauce for extra texture and nutrition.
