Instructions

  1. Preheat oven: Preheat your oven to 450 degrees Fahrenheit and line two baking sheets with parchment paper for easy cleanup and even cooking.
  2. Prepare seasoning: In a small bowl, mix together kosher salt, paprika, garlic powder, and black pepper to create the seasoning blend.
  3. Season potatoes: In a large bowl, toss the sliced potatoes with the extra virgin olive oil and the seasoning mixture until all slices are evenly coated.
  4. Arrange on baking sheets: Spread the seasoned potato slices in a single layer on the prepared baking sheets to ensure crispiness.
  5. Bake potatoes: Bake in the preheated oven for 20 minutes. Then flip the potato slices and bake for an additional 9 minutes, or until they turn golden brown and crispy.
  6. Combine and add toppings: Remove the potatoes from the oven, combine them onto one baking sheet, sprinkle evenly with shredded sharp cheddar cheese and crumbled bacon.
  7. Melt cheese: Return the baking sheet to the oven and bake for 3 to 4 minutes until the cheese has fully melted and is bubbly.
