Instructions
- Preheat oven: Preheat your oven to 450 degrees Fahrenheit and line two baking sheets with parchment paper for easy cleanup and even cooking.
- Prepare seasoning: In a small bowl, mix together kosher salt, paprika, garlic powder, and black pepper to create the seasoning blend.
- Season potatoes: In a large bowl, toss the sliced potatoes with the extra virgin olive oil and the seasoning mixture until all slices are evenly coated.
- Arrange on baking sheets: Spread the seasoned potato slices in a single layer on the prepared baking sheets to ensure crispiness.
- Bake potatoes: Bake in the preheated oven for 20 minutes. Then flip the potato slices and bake for an additional 9 minutes, or until they turn golden brown and crispy.
- Combine and add toppings: Remove the potatoes from the oven, combine them onto one baking sheet, sprinkle evenly with shredded sharp cheddar cheese and crumbled bacon.
- Melt cheese: Return the baking sheet to the oven and bake for 3 to 4 minutes until the cheese has fully melted and is bubbly.
- Add fresh garnishes: Remove from oven and top with diced jalapeno, diced tomatoes, sour cream, diced shallots, and diced green onions to serve.

- Air fryer option: Season potato slices and air fry at 360 degrees Fahrenheit for 15 minutes, flipping every 5 minutes until crispy.
- After air frying, top potatoes with cheese and bacon, then air fry again for 1-2 minutes to melt cheese.
- Use parchment paper in air fryer basket to prevent sticking.
- For spicier nachos, leave jalapeno seeds in or add extra jalapenos.
