Description

This refreshing Cucumber Salad combines thinly sliced English cucumbers and red onion with a tangy and creamy dressing made from apple cider vinegar, olive oil, Miracle Whip, honey, garlic, and fresh herbs. Perfect as a crisp side dish for summer meals or a light appetizer.

Instructions

  1. Slice the vegetables: Slice the English cucumbers into thin slices and the red onion into thin half circles. Combine both in a large bowl.
  2. Season the vegetables: Sprinkle salt and black pepper over the sliced cucumbers and onions according to your taste preferences.
  3. Make the dressing: In a small bowl, whisk together the apple cider vinegar, olive oil, Miracle Whip, honey, minced garlic, and dill until smooth and well combined.
  4. Toss salad with dressing: Pour the dressing over the sliced vegetables and toss gently to coat all pieces evenly.
  5. Add parsley: Stir in the chopped fresh parsley to add a bright, fresh flavor.
