Instructions
- Prepare Baking Sheets: Line 3 baking sheets with wax paper and set aside to prepare for setting the divinity candy.
- Make Sugar Syrup: In a 3.5 quart saucepan fitted with a candy thermometer, whisk together sugar, corn syrup, and water. Heat over medium heat until the sugar dissolves, stirring occasionally. Increase heat to high and stop stirring, cooking until the thermometer reads 250 degrees Fahrenheit.
- Beat Egg Whites: While the syrup heats, beat egg whites in a stand mixer until stiff peaks form, creating a stable base for the candy.
- Combine Syrup and Egg Whites: Slowly and carefully stream the hot syrup mixture into the egg whites while the mixer runs on medium speed, continuing this process for about 2 minutes to incorporate fully. Add vanilla extract.
- Mix Until Set: Continue beating the mixture on medium speed for 15 to 20 minutes until the divinity is no longer shiny and holds its shape. If the mixture or mixer gets too warm, pause mixing every five minutes for 2-3 minutes to cool down.
- Test Consistency: Test a spoonful of the mixture to ensure it holds shape without spreading. If it spreads, keep mixing until firm.
- Shape Divinity: Quickly use two spoons sprayed with non-stick cooking spray to drop spoonfuls onto the prepared wax paper. Gently swirl the top of each piece for a smooth finish. Optionally, top each piece with a pecan.
- Set Candy: Allow divinity to set on the wax paper for about 1 hour until fully firm.
- Store or Serve: Serve immediately or store the divinity candy in an airtight container for up to two weeks.

- Using a cookie scoop sprayed with non-stick cooking spray is a faster way to portion divinity and produces uniformly sized pieces, although it won't give as smooth a finish as spoons.
- Make sure to carefully monitor the candy thermometer to reach exactly 250 degrees Fahrenheit to get the proper candy texture.
- Allow the mixture to cool adequately during mixing to prevent it from becoming too soft and spreading.
