- Make the Peppermint Dough: In the bowl of a stand mixer or a large mixing bowl with an electric hand mixer, combine the sweetened condensed milk and peppermint extract. Gradually beat in the powdered sugar, one cup at a time, until a stiff dough forms that can be easily shaped.
- Shape the Patties: Using a cookie scoop, portion the dough into 1-inch balls (approximately the size of a ping pong ball) and place them onto a baking sheet lined with a non-stick mat. Press down on each ball gently to flatten them into patties of about 1/4 inch thickness.
- Dry the Patties: Allow the patties to dry for 2 hours at room temperature. Flip each patty once halfway through the drying time to ensure even drying on both sides.
- Melt the Chocolate: When the drying time is almost complete, combine the chocolate chips and coconut oil or shortening in a saucepan over medium heat. Stir continuously until the chocolate has melted smoothly, then remove the pan from heat.
- Coat the Patties: Dip each peppermint patty fully into the melted chocolate to coat it evenly. Place the coated patties back onto a lined baking sheet to set.
- Add Sprinkles: While the chocolate coating is still wet, gently press the Christmas sprinkles on top to decorate. Let the patties cool completely until the chocolate hardens before serving or storing.
