Tomato Basil Topping

  • 2 cups diced Roma tomatoes (260 g) (5-6 tomatoes)
  • 1 head of garlic (minced)
  • 1 1/2 tablespoons olive oil

  • 5 tablespoons fresh chopped basil (9 g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare Tomato Basil Topping: In a medium-sized bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Stir well to mix all ingredients and set aside to allow flavors to meld.
  2. Prepare Chicken Breasts: If desired, pound the chicken breasts to an even thickness for uniform cooking. Coat each chicken breast evenly with olive oil.
  3. Season Chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning blend evenly over all sides of the chicken breasts.
  4. Grill Chicken: Heat your grill to high heat. Place the chicken breasts on the grill and cook for 8 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  5. Add Cheese: During the last couple of minutes of grilling, place one slice of mozzarella cheese on top of each chicken breast to melt.
  6. Rest and Serve: Remove the chicken from the grill and let it rest for about 5 minutes to retain juices. Then, top each chicken breast with the prepared tomato basil topping and drizzle generously with balsamic glaze before serving.
