  • 1 tablespoon olive oil
  • Salt, ½ teaspoon
  • Ground black pepper, ½ teaspoon

Instructions

  1. Preheat the grill: Heat your grill to medium heat to prepare for cooking the sausages and vegetables.
  2. Prep the veggies: In a medium bowl, toss the sliced red and yellow bell peppers and yellow onion with olive oil, salt, and ground black pepper. Set aside while the grill heats.
  3. Grill the sausages: Place the sausages directly on the grill grates and cook for 5-7 minutes on each side until fully cooked through. Transfer to a plate and tent with foil or keep warm over indirect heat on the grill.
  4. Grill the veggies: Place the prepared vegetables in a grill basket and cook over medium heat for 7-10 minutes. Toss often until softened and lightly charred.
  5. Assemble the rolls: Place one grilled sausage in each bun. Top with the grilled peppers and onions, spoon 2 tablespoons of marinara sauce over each, and sprinkle with mozzarella cheese. Return assembled rolls to the grill over indirect medium-high heat or under a broiler for 1-2 minutes to melt the cheese.
