  • ⅓ cup roasted pistachios, finely chopped
  • ½ cup dried cranberries, finely chopped

Instructions

  1. Prepare the cheese balls: Line a large plate with parchment paper. Use a 1-ounce cookie scoop (approximately 2 tablespoons) to scoop out balls of cheese, placing each onto the prepared plate. Repeat until all the cheese is used. Freeze the plate for 20 minutes to firm up the cheese balls for easier handling.
  2. Set up coatings: While the cheese freezes, place the chopped pistachios on one small plate or shallow bowl, and the chopped dried cranberries on another.
  3. Roll and coat the truffles: Remove the cheese balls from the freezer. Using your hands, gently roll each scoop into a round ball shape. Roll half of the cheese balls in chopped pistachios and the other half in chopped dried cranberries until fully coated.
  4. Serve and garnish: Arrange the coated truffles on a serving platter. Optionally, decorate around the platter rim with fresh rosemary sprigs. Serve immediately or refrigerate until ready to serve.
