This festive Holiday Rice Krispie Treats recipe combines classic crispy marshmallow cereal bars with colorful holiday M&M's, sprinkles, and a drizzle of white chocolate for a cheerful and delicious treat perfect for celebrations.

- 16 ounces mini marshmallows, divided
- 1 teaspoon pure vanilla extract
- 6 cups rice krispies cereal
- 1 ¼ cup holiday M&M's, divided
- ¼ cup holiday sprinkles
- 5 ounces Ghirardelli white chocolate melting wafers, melted (1/2 bag)
Instructions
- Prepare the Baking Dish: Line a 9-inch square baking dish with parchment paper and set it aside to make cleanup easier and to ensure the treats come out cleanly.
- Melt the Butter and Marshmallows: In a large saucepan over medium heat, melt the butter. Once melted, add all but 1 cup of the mini marshmallows, then reduce heat to low. Stir continuously until the marshmallows are completely melted and smooth.
- Add Flavoring and Mix Cereal: Remove the saucepan from heat and stir in the vanilla extract. Add the rice krispies cereal and the remaining 1 cup of marshmallows. Gently stir until the cereal is evenly coated and the marshmallows start to melt slightly but maintain some texture.
- Fold in M&M's and Sprinkles: Fold in 1 cup of the holiday M&M's and all the holiday sprinkles, distributing them evenly throughout the mixture.
- Transfer to Baking Dish and Press: Pour the mixture into the prepared baking dish. Using your fingertips, gently press the mixture down evenly without compacting it too much, to keep it light and crispy.
- Add White Chocolate Drizzle and Finish Toppings: Drizzle the melted white chocolate wafers over the top of the pressed rice krispie treats. Sprinkle the remaining ¼ cup of holiday M&M's and a pinch of extra sprinkles on top for decoration.
- Set and Serve: Allow the treats to set at room temperature for one hour until firm. Once set, cut into squares and serve.
Notes
- Use any holiday M&M’s variety you like; milk chocolate or peanut butter M&M’s work great, though peanut butter has a crunchier texture.
- Be sure to use fresh marshmallows and cereal to avoid stale treats.
- Jimmies sprinkles (log shaped) are preferred for their softness and appearance, but quins (flat circles or shaped sprinkles) can also be used. Avoid nonpareils as they do not work well.
- Feel free to swap out holiday candy and sprinkles to match different seasonal celebrations.
- Store treats in an airtight container at room temperature for up to one week.
- You can freeze the treats for up to 3 months for longer storage.
