Description
Honey Garlic Chicken Skewers feature tender, marinated chicken pieces cooked on a BBQ or griddle for a delicious sweet and smoky flavor, complemented by colorful veggies and a sprinkle of sesame seeds and fresh coriander.

Marinade
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Skewers
- 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare the marinade: Mix all the marinade ingredients together in a small bowl by combining 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves garlic (minced), 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey until well blended.
- Marinate the chicken: Place the chopped chicken pieces in a bowl and pour on three-quarters of the marinade, reserving the rest for brushing during cooking. Cover and refrigerate for 1 hour to allow flavors to develop.
- Prepare the skewers: If using wooden skewers, soak them in water to prevent burning. When ready to cook, heat your BBQ or griddle until very hot. Thread chicken pieces alternating with red bell pepper chunks and onion squares onto the skewers.
- Cook the skewers: Place the skewers on the hot BBQ or griddle and cook for 8-10 minutes until cooked through. Turn the skewers 3-4 times during cooking and brush with the reserved marinade halfway through. Check doneness by slicing the largest chicken piece to ensure no pink remains.
- Finish and serve: Sprinkle the cooked skewers with sesame seeds and torn coriander. Serve hot alongside salad and rice or potatoes as preferred.
Notes
- You can marinate the chicken up to a day ahead for more flavor, but avoid cooking and reheating it later to prevent dryness.
- Cooked chicken kebabs can be cooled and served cold in salads or wraps as a refreshing option.
- Substitute the onion and bell pepper with mushrooms, red onion, courgette chunks, or pineapple pieces for variety.
- Add sriracha, chili powder, or chili flakes to the marinade if you prefer a spicy kick.
