Honey Ginger Simple Syrup
- 1/3 cup honey
- 1 cup water
- 1 medium piece of fresh ginger, peeled and sliced
Lemonade
- 1 1/2 cups freshly squeezed lemon juice (preferably Meyer lemons)
- 4 cups water
- Fresh mint leaves
Instructions
- Make the honey ginger simple syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add the honey and sliced ginger. Let it steep for 20 minutes to infuse the ginger flavor into the syrup.
- Prepare the lemonade base: While the syrup is steeping, juice the lemons and pour the lemon juice into a large pitcher. Add 4 cups of water and ice to the pitcher to dilute and chill the lemonade.
- Combine and strain: After the syrup has steeped for 20 minutes, strain out the ginger slices and add the sweetened honey ginger syrup to the pitcher with the lemon water. Mix well to combine the flavors.
- Add fresh mint and serve: Add fresh mint leaves to the pitcher for a refreshing herbal note. Refrigerate to chill or serve immediately over ice for a cool, invigorating drink.
Notes
- Use Meyer lemons if available for a sweeter, less acidic flavor.
- You can adjust the sweetness by adding more or less honey according to taste.
- For a stronger ginger flavor, let the syrup steep longer or add more fresh ginger slices.
- This lemonade can be served sparkling by using carbonated water instead of still water.
- Store any leftover lemonade in the refrigerator for up to 3 days for best freshness.
