Description

Delight in these festive Peppermint Bark Rice Krispies Treats, combining the classic chewy texture of Rice Krispies with refreshing peppermint flavor and layers of dark and white chocolate topped with crushed candy canes, perfect for holiday celebrations.

Ingredients

Scale

Main Ingredients

  • ½ cup salted butter
  • 2 (10-ounce) bags miniature marshmallows
  • ¼ teaspoon peppermint extract
  • 8 cups Rice Krispies
  • ¼ cup crushed candy canes, divided (about 4 candy canes)
  • 5 ounces chopped dark chocolate (about ¾ cup)
  • 5 ounces chopped white chocolate (about ¾ cup)

Instructions

  1. Prepare the pan: Line a 9×13-inch baking dish with parchment paper and unwrap and crush the candy canes into small pieces.
  2. Melt butter and marshmallows: In a large pot over medium heat, melt the butter. Reduce heat to low, add most of the marshmallows, reserving 1 cup for later, and stir until completely melted and combined.
  3. Combine ingredients: Remove from heat and stir in the peppermint extract, Rice Krispies cereal, 2 tablespoons of the crushed candy canes, and the reserved marshmallows. Transfer mixture to the prepared pan and gently press into an even layer using the empty butter wrapper, buttered hands, or spatula without compacting.
  4. Melt chocolates: Carefully melt the dark and white chopped chocolates in separate bowls by microwaving in 20-second intervals, stirring between each, until smooth.
  5. Decorate: Drizzle both melted chocolates evenly over the Rice Krispies treats, then gently shake the pan to smooth the top. Sprinkle with the remaining crushed candy cane pieces.
  6. Set and serve: Let the treats set completely at room temperature before slicing into squares for serving.

Notes

  • Store treats in an airtight container at room temperature for up to five days to maintain freshness and chewiness.
  • Freeze individual squares wrapped in plastic wrap inside a container for up to two months; thaw at room temperature before serving.
  • Reheat thawed treats briefly in the microwave for a gooey texture, taking care not to overheat to preserve the chocolate layers.
  • These treats can be prepared up to three days in advance and stored in a sealed container, making them ideal for holiday entertaining.
