Ingredients
Scale
Main Ingredients
- 3/4 cup pineapple juice
- 1/3 cup coconut rum (Malibu Original recommended)
- 1/2 cup lemon-lime soda
- 1/8 cup fresh lime juice
- 1/8 cup simple syrup
Garnish
- Fresh pineapple skewer
- Ice cubes
Instructions
- Combine Ingredients: In a cocktail shaker or large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine all the ingredients thoroughly.
- Prepare Glasses: Fill two 12 oz. low-ball cocktail glasses about three-quarters full with ice cubes to keep the drink chilled without diluting it prematurely.
- Serve the Punch: Pour half of the cocktail mixture (approximately 1 cup) over the ice in each glass, distributing the pineapple rum punch evenly between the two glasses.
- Garnish and Present: Garnish each glass with a skewer of fresh pineapple pieces to enhance the presentation and add an extra burst of tropical flavor.
Notes
- You can store any leftover punch in the refrigerator for up to 24 hours; however, the ice will water down the drink, and the soda will lose its carbonation and become flat.
- If you do not prefer the coconut flavor, substitute the coconut rum with a white/clear rum or spiced rum as alternatives, although the coconut rum pairs best with pineapple juice for a truly refreshing taste.
- Mini 6 oz. cans of pineapple juice are convenient for this recipe because 6 oz. equals 3/4 cup, minimizing waste if making only a couple of cocktails.
- This recipe can be easily doubled or tripled to serve more guests.
- Do not add ice to the cocktail mixture until you are ready to serve to prevent dilution of the punch.
- Lemon-lime soda can be swapped out for ginger ale or lemon-lime sparkling water for a different flavor profile.
- Simple syrup can be homemade by dissolving equal parts sugar and water without boiling and stored refrigerated in a lidded jar for up to two weeks.
