Description

Slow Cooker Beef Tips and Gravy is a comforting American main course featuring tender stew meat simmered low and slow in a flavorful garlic, thyme, and onion soup mix gravy. Perfect served over rice, noodles, or mashed potatoes for a hearty family meal.

Ingredients

Scale

Beef Tips and Seasoning

  • 2 lbs stew meat
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp dried thyme
  • 3 tbsp garlic, minced
  • 1 (1 oz) package dry onion soup mix

Liquid and Thickening

  • 2 cups beef broth
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 3 tbsp cornstarch

Instructions

  1. Prepare the Meat: Place the stew meat evenly in the bottom of a 6-quart slow cooker for even cooking.
  2. Mix Seasoning and Liquids: In a medium bowl, whisk together salt, black pepper, dried thyme, minced garlic, dry onion soup mix, beef broth, ketchup, Worcestershire sauce, and cornstarch until fully combined.
  3. Add Mixture to Slow Cooker: Pour the seasoning and liquid mixture evenly over the beef tips in the slow cooker.
  4. Cook Low and Slow: Cover the slow cooker and cook on low heat for 8 hours to allow the meat to become tender and the flavors to meld perfectly.
  5. Serve and Enjoy: Spoon the beef tips and gravy over cooked rice, noodles, or mashed potatoes and serve hot.

Notes

  • Deeper Flavor: Sear beef tips in a hot skillet with butter or olive oil for a few minutes before adding to the slow cooker to brown the sides, adding extra flavor.
  • Thicker Gravy: For a thicker gravy, mix additional cornstarch with cold water until smooth and stir into the slow cooker near the end of cooking; let it cook a bit longer to thicken.
  • Make Ahead: Prepare the seasoning mixture a day in advance and refrigerate to save time on cooking day.
  • Cook on Low Heat: Cook slowly on low heat to properly break down tough connective tissue for tender beef. Avoid cooking on high.
  • Even Cooking: Cut beef stew meat into similar-sized pieces to ensure all pieces cook evenly.
