  • 1/3 cup fresh lime juice (approximately 34 limes)
  • 4 sprigs fresh mint
  • Soda water to top up

Instructions

  1. Prepare watermelon: Cut the watermelon into cubes, discarding the rind and any white parts to ensure a sweet, fresh base for the mocktail.
  2. Blend ingredients: Add the watermelon cubes and fresh lime juice to a blender and blend until smooth, using a tamper if necessary. If your blender is small, blend in batches to process all the watermelon.
  3. Strain juice: Pour the blended mixture through a fine-mesh strainer to remove any pulp, then transfer the smooth juice to a jug for serving.
  4. Assemble mocktail: Fill glasses or a large pitcher with crushed ice. Pour the watermelon lime juice into each glass or pitcher until half full, then top with soda water to fill the remaining space.
  5. Garnish and serve: Garnish each glass with a sprig of fresh mint and a slice of lime, then serve immediately for best freshness.
