Description

A zesty and refreshing spicy dill pickle margarita that combines tequila, dill pickle brine, and a touch of hot honey for a perfectly balanced cocktail with a salted Tajin rim and sparkling water finish.

  • Honey, for brushing the rim

Cocktail

  • 2 oz tequila
  • 1 oz dill pickle brine
  • 1 oz Cointreau
  • 1/2 oz lime juice
  • 1 tbsp hot honey (adjust to taste)
  • Sparkling water, to top
  • Mini dill pickles, to garnish

Hot Honey (optional)

  • 1/2 cup honey
  • 1/4 cup hot sauce (such as Frank's)
  • 1 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp red pepper flakes


Instructions

  1. Prepare the Rim: Brush the rim of your cocktail glass with honey. Pour 1-2 tablespoons of Tajin onto a shallow plate. Dip and roll the glass rim into the Tajin, then gently shake off any excess seasoning.
  2. Mix the Cocktail: In a cocktail shaker, combine the tequila, dill pickle brine, Cointreau, lime juice, and hot honey. Add ice cubes and shake vigorously until the mixture is well chilled.
  3. Serve: Strain the cocktail into the prepared glass. Top off with sparkling water to add a fizzy finish.
  4. Garnish: Add mini dill pickles as a garnish to complete the presentation and enhance the pickle flavor.

Notes

  • Hot honey can be made by heating 1/2 cup honey with 1/4 cup hot sauce, 1 tsp cayenne pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tsp red pepper flakes in a saucepan for 1-2 minutes until dissolved; store in an airtight container for up to 2 weeks at room temperature or longer in the fridge.
  • Adjust the amount of hot honey to control the sweetness and spiciness of the cocktail.
  • Use good-quality tequila and fresh lime juice for the best flavor.
  • For a less spicy drink, reduce or omit the cayenne pepper and red pepper flakes in the hot honey.
