  • 1 (20 oz) can pineapple chunks
  • 1 green bell pepper, roughly chopped

Sauce Ingredients

  • 1 cup brown sugar
  • 3/4 cup white vinegar
  • 1/2 cup ketchup
  • 3 tablespoons cornstarch
  • 3 tablespoons soy sauce


Instructions

  1. Drain Pineapple Juice. Open the can of pineapple chunks and drain the juice into a cup or bowl; set aside for making the sauce.
  2. Prepare Slow Cooker. Place the frozen meatballs in the slow cooker and top with the drained pineapple chunks and roughly chopped green and red bell peppers.
  3. Make Sauce. In the reserved pineapple juice, whisk together the brown sugar, white vinegar, ketchup, cornstarch, and soy sauce until smooth and well combined.
  4. Add Sauce to Slow Cooker. Pour the prepared sauce over the meatballs, pineapple, and peppers in the slow cooker, ensuring even coverage.
  5. Cook. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the meatballs are heated through and sauce is thickened.
