  • 10 oz. can Rotel tomatoes (do NOT drain)
  • 8 oz. spaghetti noodles, uncooked
  • 3 cups water
  • 4 oz. cheddar cheese, shredded
  • ½ cup chopped cilantro


Instructions

  1. Heat oil and brown beef: Heat olive oil in a 12-inch skillet over medium heat. Add ground beef and chopped onions, cooking until the meat is no longer pink and onions are soft and translucent.
  2. Add seasoning and liquids: Stir in taco seasoning, the entire can of Rotel tomatoes including juice, spaghetti noodles, and water.
  3. Simmer noodles: Bring the mixture to a boil over high heat, then reduce heat to low. Cover and simmer for 15 minutes until the spaghetti is cooked through but still al dente.
  4. Mix in cheese: Remove the skillet from heat, sprinkle half the shredded cheddar cheese inside, and gently stir to incorporate the cheese evenly throughout the spaghetti and meat mixture.
