Bread and Butter

- 30g mozzarella cheese, freshly grated
Instructions
- Butter bread: Slather both sides of each slice of bread thoroughly with butter, covering all four sides to ensure a rich, golden toast.
- Light toast: Heat a heavy-based skillet or frying pan over medium-low heat without adding any oil or butter. Place both pieces of buttered bread into the skillet and lightly toast for 1 minute to create a light crust and warm the bread through.
- Pile on cheese: Flip one slice of bread to the toasted side up, then pile on the vintage cheddar cheese followed by the mozzarella. Top with the other slice of bread, toasted side facing the cheese to maximize melting.
- Cook 3 minutes: Cook the sandwich for 3 minutes until the bread is evenly golden and crisp, pressing down gently with a spatula occasionally. Adjust heat if browning too fast by removing from heat briefly and lowering temperature.
- Flip, 3 minutes: Carefully flip the sandwich and cook the other side for 3 minutes until golden and the cheese is fully melted inside.
