Description

Delicious and easy Dumpling Bake featuring frozen veggie dumplings simmered in a rich red curry coconut broth with fresh vegetables, baked to bubbly perfection for a flavorful one-pan meal.

Ingredients

Scale

Red Curry Broth

  • 1 can (13.5 fl oz / 400 ml) coconut milk
  • 3 tablespoons red curry paste
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove, grated
  • 1 small cube of ginger, grated

Dumpling Bake

  • 20 frozen veggie dumplings
  • 2 bok choy bulbs, chopped
  • 1 zucchini, sliced
  • Garnishes: sesame seeds, sliced green onions, cilantro/coriander, chili crisp oil
  • White jasmine rice or noodles, for serving

Instructions

  1. Prepare the broth: In a large 12 x 8 inch (30 x 20 cm) baking dish, whisk together the coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth with no lumps of paste. Grate in the garlic and ginger and mix well.
  2. Add vegetables: Preheat the oven to 400℉ (200℃). Chop the bok choy and slice the zucchini, then add them to the baking dish. Stir to coat the vegetables evenly in the curry broth.
  3. Arrange the dumplings: Place the frozen dumplings in the baking dish, ensuring they do not overlap, and gently press them so their bottoms are submerged in the broth while the tops remain visible. Spoon some broth over the tops for moisture.
  4. Bake covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. This allows the dumplings to cook through while infusing flavors.
  5. Finish baking uncovered: Remove the foil and bake for an additional 10 minutes until the broth is bubbly and the dumplings develop a slight crisp on top.
  6. Garnish and serve: Sprinkle your choice of garnishes such as sesame seeds, green onions, cilantro, or chili crisp oil. Serve the dumpling bake hot over a bed of white jasmine rice or noodles and enjoy.

Notes

  • For a more brothy texture, add ¼ cup of water to the broth before baking.
  • Adjust red curry paste quantity according to your preferred spice level.
  • Use any dumplings of choice, fresh or frozen, vegetable or meat-based.
  • Vegetables can be substituted or added as desired, such as bell peppers or mushrooms.
  • Garnishes are optional but add flavor and visual appeal.
  • This dish pairs well with steamed rice or noodles to soak up the flavorful broth.
